Sunny’s Cream Cheese Pie

Prepare crumb crust for 10″ plate but don’t bake.

1 pint sour cream

2 well beaten eggs (important)

1/2 cup sugar

dash salt

3 small packages cream cheese – you need 9 ounces all together

grated rind from a lemon

Beat cream cheese, salt, sugar, and 3 TBS sour cream until creamy. Beat eggs separately until well beaten. Add eggs to first mixture and beat some more. Pour mixture into pie shell and bake at 325 degrees approximately 35 to 40 minutes until set. Test with toothpick.

Topping

remaining sour cream

3 TBS sugar

1 TSP vanilla

Beat for 2 minutes and pour over hot pie and bake 5 minutes more. Remove from oven and chill for at least 6 hours.
